Crepe it Up!

To brighten up those winter blues and treat yourself because hey, you work hard and you deserve it, here’s a fun and super easy crepe recipe!

3 eggs

2/3 cup of flour

1 cup of milk

1/2 tsp of salt

Mix ingredients (doesn’t need to be completely smooth, just mixed up enough so that there are no big clumps), let sit in the fridge for 20 min in your mixing bowl of choice.

Set your stove on a low-medium heat, pop a little butter in the pan and let’s cook those crepes! You’re aiming for them to be quite flat, picking up the pan and tiling it to encourage the crepe mixture to spread and even out goes a long way.

A minute or two on each side, depending on the heat level, and voila! You can make about 8 mini crepes or about 4 larger crepes with this recipe. I prefer the mini but I encourage you to make what you like.

As for how you can dress those crepes, there are a lot of family traditions and preferences out there.

What do I like?

A little bit of sugar and lemon juice! Then I roll it up and enjoy.

So simple, so satisfying!

Feel free to get wild with fruit. Blueberries, blackberries, strawberries. All the berries. And sliced bananas are yummy too!

Have a chocolate craving that needs to be appeased pronto? Nutella is a great and easy addition.

Live alone and feel odd about making a batch? Don’t sweat it because you can save the uncooked batter in the fridge for a few days, making one or two at a time and providing multiple breakfast/snack options.
